Cardedeu

Cardedeu perches on the steep inner wall of the Coatepeque caldera, a vast crater lake of impossibly blue water an hour west of San Salvador, and it has become the country's signature escape. The architecture works with the drop: a chapel, restaurant terraces and an infinity-edge pool step down the cliff, and every vantage frames the lake and the cone of Cerro Verde beyond. Salvadoran weekenders come for lunch; overnight guests get the caldera's stillness once the day visitors leave.

Suites are minimalist and calm—white walls, timber, glass fronts opening to the view—arrayed so the lake fills the window from bed. The restaurant is the heart of the property, serving Salvadoran and Mediterranean-leaning dishes with lake fish and coffee-country produce on terraces that catch the sunset directly across the water; the wine cellar and chapel make it a favourite wedding stage.

Days are gentle: boat trips on the lake, swimming from the private deck, or excursions to the nearby Santa Ana volcano hike, Cerro Verde national park and the Ruta de las Flores.
